Garden Wrap
Prep: 15 min, Cook: 10 min.
  • 1 cup tomatoes, chopped
  • 1 cup zucchini, chopped
  • 1 cup yellow squash, chopped
  • 1 cup red bell pepper, chopped
  • 1 cup cooked brown rice
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. lime juice
  • 2 Tbs. balsamic vinegar
  • 1/8 tsp. hot red pepper sauce, or to taste
  • 4 8 inch flour tortillas, warmed

Turn on broiler. Spread first 4 ingredients on a cookie sheet and broil 5-10 minutes, until browned. Combine vegetables with remaining ingredients, except tortillas, in a bowl. Spoon 1 cup filling down center of each tortilla. Roll up and serve.
