Asparagus & Smoked Chicken Salad
Prep: 10 min, plus chilling time.
  • 4 cups lettuce leaves, washed and drained
  • 1 cup cherry tomatoes
  • 3/4 lb. canned asparagus spears, drained
  • 4 pieces smoked chicken, sliced
  • 1/3 cup mayonnaise type salad dressing
  • 1 tsp. fresh ginger, grated

Arrange lettuce and tomatoes on plates and top with chicken and asparagus. Chill 30 minutes. Mix dressing and ginger and drizzle over salad.
