Baked Sweet Potato with Sesame Soy Dressing

- 2 lbs. sweet potatoes, peeled and cut into 1 inch pieces
- 2-3/4 Tbs. olive oil
- 1 large onion, sliced
- 2 cloves garlic, crushed
- 1 Tbs. plus 1 tsp. fresh thyme, chopped
- 1 Tbs. sesame oil
- 2 tsp. soy sauce
- 2-3/4 Tbs. lemon juice
- 1 clove garlic, crushed
- 2 shallots, sliced
- 2-3/4 Tbs. sesame seeds, toasted
Preheat oven to 350°F. Combine sweet potatoes and next 4 ingredients in a baking dish and mix well. Bake about 30 minutes or until potato is tender. Stir halfway through cooking. Set aside to cool. Combine next 4 ingredients in a bowl and mix well. Combine potato mixture, shallots, sesame seeds and dressing in a bowl and mix well.
