Preheat oven to 375°F. Place half the mint chips in the top of a double boiler and barely simmer over low heat until melted and smooth. Remove from heat. Set aside to cool to room temperature. Sift flour, baking soda and salt together in a small bowl and set aside. Combine butter and next 3 ingredients in a large bowl. Beat with an electric mixer until creamy. Add egg and melted chocolate and mix thoroughly. Gradually stir in flour mixture until mixed thoroughly. Stir in remaining mint chocolate chips and chopped walnuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8-10 minutes until firm around edges and slightly soft in the middle. Let cool on pan 2-3 minutes before transferring cookies to cool on wire racks. This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only.
