Rusty's Incredible Chicken Wings
Prep: 10 min, Marinate: 1:30, Cook: 1:00.
  • 16 chicken wings, rinsed with wingtip tucked behind drummette portion of wing
  • 1/3 cup Kosher salt
  • 1/3 cup sugar
  • 1 star anise, crushed
  • 2 quarts water
  • 2 Tbs. bacon fat
  • 2 Tbs. tamari or soy sauce

Combine wings with next 4 ingredients in a sealable container. Cover tightly and mix thoroughly. Marinate in refrigerator 1-1/2 hours. Rinse wings and drain. Preheat oven to 350°F. Place bacon fat in a shallow baking dish and place in oven 3-4 minutes until hot. Arrange wings in a single layer in dish, turning wings to coat with bacon fat. Bake 30 minutes. Turn wings and drizzle with tamari sauce. Bake another 30-35 minutes until wings are browned and cooked thoroughly.
