Salad Nicoise
Prep: 15 min, Cook: 10 min.
  • 1 lb. green beans
  • 2 cloves garlic, crushed
  • 2 lemons, juiced
  • 1/2 cup extra virgin olive oil
  • 2 cups Romaine lettuce, torn
  • 6 cups organic salad greens mix
  • 2 hard-cooked eggs* (optional), chilled and sliced
  • 1/2 lb. canned or cooked tuna chunks, or 1 cup lemon tempeh cubes, sautéed and chilled
  • 1/2 cup Niçoise or black olives
  • 2 small red onions, minced
  • 4 roma tomatoes, seeded and chopped

Place green beans in a steamer basket over boiling water. Cover pan and steam 8-10 minutes or until almost tender. Rinse under cold running water. Drain well. Combine garlic, lemon juice and oil in a jar with a tight-fitting lid. Set aside. Place lettuce and salad mix on plates, followed by green beans and remaining ingredients. Season dressing with salt and pepper to taste. Shake vigorously. Pour over salad and serve.
