Sweet Potato Casserole Gratin

- 2 cups sweet potatoes, peeled and cut into 1 inch pieces
- 2 Tbs. orange juice
- 2 Tbs. chopped pecans
- 2 Tbs. flaked coconut
- 1/4 cup brown sugar
- 2 Tbs. unsalted butter, melted
- 1 cup bananas, mashed
- 1/4 cup cornflakes, crushed
Place sweet potatoes in a steamer basket over boiling water. Cover saucepan and steam 12-15 minutes until potatoes are tender. Drain and return potatoes to pan. Mash with an electric mixer or potato masher. Preheat oven to 350°F. Combine mashed potatoes with next 3 ingredients, half the brown sugar and half the butter. Mix thoroughly. Place half the potato mixture in a shallow baking dish. Cover with mashed bananas and another layer of potato mixture. Combine cornflakes and remaining brown sugar in a bowl. Sprinkle over potatoes. Drizzle with remaining butter and bake about 20 minutes until bubbly and top is golden.
