Clay Pot Jambalaya
Prep: 15 min, Cook: 35 min.
  • 4 slices of bacon, diced
  • 1 onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 2 cloves garlic, crushed
  • 3 cups cooked rice
  • 1 cup canned tomatoes
  • 1 tsp. tomato paste
  • 1 cup cooked chicken, or ham, diced
  • 1-1/2 lbs. cooked shrimp, thawed if frozen, peeled

Soak clay pot and its cover in water at least 15 minutes. Place first 4 ingredients in pot. Cover and place in cold oven. Turn on oven to 450°F and bake 15-20 minutes or until bacon is browned. Add remaining ingredients, except shrimp. Cover and return to oven. Reduce temperature to 375°F and bake another 20-30 minutes. Stir in shrimp just before serving.
