Clay Pot Corned Beef
Prep: 15 min, Cook: 2:00.
  • 3 lbs. whole corned beef brisket
  • 1 orange, sliced with peel
  • 1 cup celery, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, crushed
  • 1 tsp. dill seed
  • 6 whole cloves
  • 2 bay leaves
  • 1/2 tsp. rosemary
  • 1 cinnamon stick

Soak clay pot and its cover in water at least 15 minutes. Arrange all ingredients in pot and pour in enough water to cover meat. Cover and place in cold oven. Turn oven on to 450°F and bake 1-1/2 to 2 hours. Serve hot or chilled.
