Deep Fryer Chimichangas
Prep: 15 min, Cook: 20 min.
  • vegetable oil
  • 2 lbs. ground beef
  • 1/2 cup shredded cheddar cheese
  • 6 10 inch flour tortillas, warm
  • toothpick
  • 1/2 cup sour cream
  • 1 cup shredded lettuce
  • 1 avocado, peeled and sliced
  • 1 cup purchased guacamole
  • 1 cup purchased salsa

Heat oil in an electric deep fryer to 375°F. Cook ground beef in a heavy nonstick skillet over medium high heat 7-8 minutes, stirring frequently to break up meat, until cooked through. Let cool slightly before mixing in cheese. Fold over bottom third of each tortilla to make a pocket. Spread about 1/3 cup meat mixture in tortilla pocket. Fold up from bottom once, then fold in sides of tortilla. Continue rolling up until it makes a cylinder. Secure with toothpicks. Deep fry 8-10 minutes, 3 or 4 at a time, until browned. Drain on absorbent paper. Remove toothpicks and serve with remaining ingredients.
