Microwave Tapioca Pudding
Prep: 5 min, Cook: 20 min, plus cooling time.
  • 1/4 cup quick cooking tapioca
  • 1/2 cup sugar
  • 4 cups milk
  • 2 eggs, lightly beaten
  • 1 Tbs. vanilla extract

Combine first 3 ingredients in a bowl. Cover and microwave 10 minutes on high, or until steaming but not boiling. Stir and microwave another 7 minutes on high, uncovered, or until slightly thickened. Beat eggs into tapioca mixture, whisking briskly. Microwave 1 minute on high, uncovered. Stir in vanilla. Cool to room temperature or serve chilled.
