Salmon Burgers
Prep: 10 min, Cook: 10 min.
  • 2 tsp. olive oil
  • 2 cups onion, chopped
  • 1-1/4 lbs. fresh salmon fillets, skinned
  • 2 cups dry white wine
  • 2 oranges, juiced and rind grated
  • 3 Tbs. fresh dill, chopped
  • 1/2 cup fresh breadcrumbs
  • 3 cups frozen corn
  • 4 egg whites
  • 4 poppy seed rolls
  • nonstick cooking spray

Heat oil in a heavy nonstick skillet over medium high heat. Saut'e onion 3-4 minutes, or until softened and browned. Cut salmon into 8 strips and poach in wine a few minutes, or until cooked to medium doneness.

Discard liquid and place salmon in a bowl. Mash with fork. Add orange rind, 1/4 cup orange juice and next 3 ingredients. Add sautéed onion and stir well. Thoroughly mix in egg white, salt and pepper to taste, and shape salmon mixture into 8 patties.

Spray non-stick pan with cooking spray, and when pan is medium hot, add patties and brown well, about 2 minutes per side. Cut rolls in half, and place a patty on each half.

This recipe serves 4 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 2 only. The instructions describe how to prepare the ingredients for one pan. There are enough ingredients to prepare 2 pans.
