South Sea Island Pork Kabobs

  • 1-1/2 lbs. boneless pork tenderloin chops, cut into 2-3 inch cubes
  • 2 Tbs. pineapple juice concentrate
  • 1 Tbs. ginger, minced
  • 1/3 cup water
  • 2 Tbs. lime juice
  • 2 tsp. dark rum
  • 6 skewers, 8-10 inch

Place the pork cubes in a ziploc bag. Combine remaining ingredients in a bowl and add to the pork. Let the pork marinate for several hours. Thread skewers with the marinated pork. Grill 6 inches from the heat source for about 10-15 minutes, rotating the skewers. Make sure the pork is completely cooked through (no traces of pink). Serve over rice if desired.
