Snow Peas with Water Chestnuts and Bamboo Shoots

  • 2 tsp. peanut oil
  • 1/2 cup onion, diced
  • 1/4 cup celery, diced
  • 2 cups snow peas, trimmed
  • 1/2 cup sliced water chestnuts
  • 1/2 cup canned bamboo shoots, sliced
  • 1/2 cup low sodium low fat chicken stock
  • salt and pepper

In a wok over medium high heat, heat the oil. Add the onion and celery and stir-fry for 3 minutes. Add the snow peas, water chestnuts, bamboo shoots and stock. Cover and steam 1-2 minutes. Add the pepper and salt to taste. Snow peas should still be crisp and bright green when served.
