Spicy Fish Tacos
Prep: 10 min, Cook: 10 min.
  • 1/3 cup fresh cilantro leaves
  • 1-1/4 jalapeño peppers, seeded
  • 3 ounces reduced fat mayonnaise
  • 3 ounces lite sour cream
  • 3/4 avocado
  • 2 tsp. lime or lemon juice
  • 8 fish sticks
  • 8 6 inch flour tortillas
  • 2 cups shredded lettuce
  • 2 Tbs. plus 2 tsp. pico de gallo
  • 8 lemon wedges

In a food processor, blend first 6 ingredients to create fish sauce. Fry fish sticks until golden. Heat tortillas on grill, then top with fish sauce. Place fish stick on each tortilla and top with lettuce and pico de gallo. Serve with lemon wedges on the side.
