Shrimp Chowder
Prep: 10 min, Cook: 15 min.
  • 1-1/3 cups potatoes, diced
  • 1/2 cup onion, chopped
  • 2 Tbs. plus 2 tsp. celery, finely chopped
  • 1 cup water
  • 1-1/3 cups evaporated skim milk
  • 5 ounces uncooked shrimp
  • 2 tsp. parsley, minced

Bring first 4 ingredients and salt and pepper to taste to a boil in a saucepan. Reduce heat, cover and simmer about 10 minutes.

Add milk and shrimp and continue to simmer a few minutes longer, or until shrimp turn pink. Serve soup sprinkled with parsley.
