Italian Lemon Cookies
From The Dreaded Broccoli Cookbook by Barbara and Tamar Haspel
Prep: 15 min, Cook: 10 min.
  • 3 large egg whites
  • 1-3/4 cups sugar
  • 1 tsp. lemon zest
  • 1/2 tsp. baking powder
  • 1/4 tsp. almond extract
  • 1-3/4 cups all purpose flour
  • 1-1/2 cups chopped nuts or dried fruit

Preheat oven to 375°F. Using an electric mixer, beat the egg whites, sugar, lemon zest, baking powder and almond extract until smooth. Add the flour and nuts or fruit, and stir just until the ingredients are thoroughly mixed. Drop tablespoon-size lumps of dough on a greased baking sheet. Bake until the cookies are lightly browned, 10-12 minutes. Let them cool completely and store in an airtight container.
