Guacamole Veggie Wrap
Prep: 15 min.
  • 4 spinach flavored tortilla wraps or flour tortillas
  • 2/3 cup plus 3 Tbs. purchased guacamole
  • 2/3 cup salsa
  • 1 cup roma tomatoes, chopped
  • 1/3 cup lettuce, shredded
  • 2/3 cup shredded Monterey Jack cheese
  • 1/3 cup jicama, peeled and cut into thin strips
  • 1/2 cup alfalfa sprouts
  • 2 Tbs. plus 2 tsp. fresh cilantro, chopped
  • 3/4 jalapeño pepper, seeded and chopped
  • 1-1/4 scallions, chopped
  • 2 Tbs. plus 2 tsp. black olives, chopped
  • 1 cup Picante sauce

Arrange tortillas on a work surface. Spread guacamole over one side of tortilla. Cover with remaining ingredients, except picante sauce. Fold tortillas, enclosing mixture to make a packet. Serve with picante sauce.
