Deep Fryer Chickpea Fritters
Prep: 15 min, Cook: 10 min.
  • 1/2 lb. canned chickpeas, rinsed and drained
  • 2 eggs, separated
  • 1/8 tsp. salt
  • 1 Tbs. anisette liqueur (optional)
  • 1 Tbs. olive oil
  • 1/4 cup sugar
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. lemon peel, grated
  • 1/4 cup plus 3 Tbs. all purpose flour
  • 1/2 cup confectioner's sugar
  • canola oil

Purée chickpeas in a food processor or blender until smooth. Add egg yolks, salt, anisette and oil and process until smooth. Stir in next 4 ingredients and blend well. Using a clean bowl and beaters, beat egg whites until stiff but not dry. Fold into chickpea mixture. Heat oil in an electric deep fryer to 400°F. Deep fry tablespoonfuls of batter 3-4 minutes until golden. Drain on absorbent paper and dust with confectioner's sugar while still warm.
