Combine first 5 ingredients and all but 1/2 tsp. olive oil in a bowl. Season with salt and pepper to taste and mix thoroughly. Add lamb chops and turn to coat both sides of lamb chops. Cover and marinate in refrigerator at least 4 hours. When ready to cook, bring to room temperature for 30 minutes. Preheat grill machine. Brush remaining oil over both grilling surfaces. Remove lamb chops from marinade, reserving marinade. Arrange on hot grill, in batches if necessary. Pour a little marinade over each chop. Close cover and cook 4-6 minutes, or until meat is cooked thoroughly.
