Microwave Pesto Polenta
Prep: 5 min, Cook: 15 min.
  • 2 cups water
  • 2/3 cup yellow cornmeal, medium grind
  • 1-1/4 tsp. Kosher salt
  • 2 Tbs. unsalted butter
  • 2 Tbs. plus 2 tsp. grated Parmesan cheese
  • 3-1/2 Tbs. purchased pesto sauce

Combine first 3 ingredients in a microwave safe dish. Microwave uncovered 6 minutes on high. Remove and stir thoroughly. Cover loosely with waxed paper and microwave another 6 minutes, or until water has been absorbed. Remove and stir in remaining ingredients and salt and pepper to taste. Let stand 3 minutes before serving.
