Baked Bananas with Yogurt
Prep: 10 min, Cook: 5 min.
  • 4 firm bananas, peeled and cut diagonally into 1/2 inch slices
  • 1/4 cup plus 2 Tbs. dark brown sugar, packed
  • 1/2 tsp. cardamom
  • 1 Tbs. plus 1 tsp. unsalted butter or margarine
  • 2 cups lowfat vanilla yogurt

Preheat oven to 450°F. Arrange banana slices in a buttered baking dish. Sprinkle with 2 Tbs. brown sugar and cardamom. Bake 5 minutes. Remove from oven. Sprinkle with remaining brown sugar and dot with butter. Gently toss to combine. Serve bananas with vanilla yogurt.
