Holiday Sweet Potatoes and Apples

- 2 lbs. sweet potatoes, peeled and cut into 1/8 inch slices
- 2 lbs. tart apples, peeled, cored and sliced
- 1 cup apple cider
- 2/3 cup dried cranberries or dried cherries
Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes or until tender. Place remaining 3 ingredients in another saucepan over medium heat.
Cover and cook about 5 minutes, or until apples soften. When sweet potatoes are cooked, drain and stir into apple mixture. Continue cooking over low heat several minutes, until flavors are combined.
