Pineapple Baked Beans
Prep: 15 min, Cook: 2:10.
  • 3 bacon slices, chopped
  • 3/4 cup green onions, sliced with tops
  • 3 cloves garlic, crushed
  • 3-3/4 lbs. canned Great Northern beans, or Navy beans, drained and rinsed
  • 1/2 lb. pineapple, crushed
  • 1/2 tsp. jalapeño pepper, minced
  • 1/2 cup light brown sugar, packed
  • 1 cup apple juice, or pineapple juice
  • 2 Tbs. Dijon mustard
  • 1/4 tsp. pepper

Fry bacon in small skillet until crisp; drain bacon thoroughly on paper towels. Discard all but 1 teaspoon bacon fat; add onions and garlic to skillet and sauté until tender, 4-5 minutes. Mix all ingredients in 1-1/2 quarts casserole. Bake, covered, at 300°F for 90 minutes, then bake, uncovered, for 30 minutes. Microwave instructions: cook on medium high for 45-60 minutes.
