Great Northerns and Tuna with Lemon and Ginger
Prep: 10 min.
- 2 lbs. canned Great Northern beans
- 9 ounces canned water-packed albacore tuna, drained
- 1-1/2 cups Romaine lettuce, shredded
- 2 Tbs. fresh lemon juice
- 1/2 tsp. soy sauce
- 1 tsp. fresh ginger, minced
- 2 tsp. fresh garlic, crushed
- 1/4 cup extra virgin olive oil
- 4 lemon slices
Prepare dressing by combining lemon juice, soy sauce, ginger, and garlic. Whisk in olive oil. Set aside. Using a strainer, drain beans and rinse very well, being careful to not break beans. Transfer to flat serving dish. Separate drained tuna and add to beans. Add lettuce and dressing. Toss very gently just to combine. Garnish with lemon slices. Serve immediately.
