Original A-1's Texas Three Bean Bake
Prep: 10 min, Cook: 55 min.
  • 1 ounce bacon, diced
  • 2 Tbs. onion, diced
  • 2 ounces lean ground sirloin
  • 1 ounce brown sugar
  • 1/4 cup plus 2 Tbs. ketchup
  • 1-1/2 tsp. red wine vinegar
  • 1/4 tsp. liquid smoke
  • 1/4 lb. canned kidney beans, drained and rinsed
  • 1/4 lb. canned green baby lima beans, drained and rinsed
  • 1/4 lb. canned pinto beans, drained and rinsed

In a large saucepan, combine bacon, onion, and ground sirloin. Sauté until onions are clear and beef is brown. Add brown sugar, ketchup, red wine vinegar, and liquid smoke and simmer on low for 10-15 minutes. Stir often. Add all beans and simmer 20-30 minutes. Serve as a side dish or with tortilla chips.
