Greek Hero
Prep: 15 min.
  • 1 loaf French bread, each about 15 inch long
  • 2 roasted red peppers, cut into strips
  • 1/2 medium cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 small tomatoes, sliced
  • 2 ounces reduced-fat feta cheese, crumbled
  • 4 leaves Romaine lettuce
  • 4 Kalamata or black olives, as garnish
  • 1 lb. canned garbanzo beans, rinsed, drained
  • 2 Tbs. lemon juice
  • 1 tsp. olive oil
  • 1 tsp. garlic, crushed
  • 1 tsp. dried oregano leaves
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Slice bread in half lengthwise. Spread bottom half of bread with desired amount of hummus. (See below.) Layer with roasted peppers, cucumber, onion, and tomatoes and sprinkle with feta cheese. Top with romaine lettuce and top half of bread.

To make hummus: Coarsely mash garbanzo beans. Mix in lemon juice, olive oil, minced garlic, and oregano leaves. Add salt and pepper to taste.
