Speedy Skaters' Stew
Prep: 10 min, Cook: 25 min.
- 5 ounces reduced-fat smoked turkey sausage, cut into 1/2 inch slices
- 2 tsp. vegetable oil
- 2/3 cup onions, chopped
- 1/4 green bell pepper, seeded and chopped
- 2-1/4 cups reduced-sodium canned diced tomatoes, undrained
- 5 ounces canned black beans, drained and rinsed
- 5 ounces canned garbanzo beans, or canned black-eyed beans, drained and rinsed
- 5 ounces canned red kidney beans, drained and rinsed
- 5 ounces canned pinto beans, drained and rinsed
- 1/4 tsp. dried oregano leaves
Cook sausage in oil in large Dutch oven until browned, 3-4 minutes. Add onion and green pepper; cook over medium heat until onion is tender, 5-8 minutes.
Add remaining ingredients; heat to boiling. Reduce heat and simmer, uncover, 10 minutes. Season to taste with salt and pepper. Serve with garlic bread if desired.
Note: You can make this stew up to 2 days in advance; refrigerate, covered.
