Colorful Pasta Salad

- 2 cups cooked corkscrew macaroni
- 1-1/3 cups chopped tomatoes
- 2/3 cup canned sweet corn kernels
- 2/3 cup canned black beans or red kidney beans, drained and rinsed
- 1/3 cup red onions, or purple onions
- 3-1/2 Tbs. chopped red bell pepper
- 3-1/2 Tbs. chopped green bell pepper
- 3-1/2 Tbs. chopped yellow bell pepper
- 1-1/4 tsp. vinegar
- 3/4 tsp. lemon juice
- 3/4 tsp. olive oil
- 3/4 tsp. Italian herb seasoning
- 1 Tbs. plus 1 tsp. grated Parmesan or Romano cheese
- 1/8 tsp. orange zest, optional
- 1/8 tsp. salt (optional)
- 1/8 tsp. black pepper (optional)
Mix all ingredients in a large bowl. Keep refrigerated until served (up to 24 hours).
