Peas and Peanut Salad
Prep: 5 min, Cook: 10 min.
  • 1-1/3 cups fresh green peas
  • 2/3 cup peanuts
  • 2 Tbs. plus 2 tsp. mayonnaise, or fat-free mayonnaise
  • 3/4 tsp. Cajun seasoning

Steam the green peas until they are firm and crunchy. Place peas in a bowl and mix in all other ingredients. Refrigerate until ready to serve.
