Microwave Chicken Nuggets
Prep: 15 min, Cook: 10 min.
  • 1-1/2 lbs. boneless, skinless chicken breasts, or thighs
  • 1 cup corn flakes cereal
  • 1 tsp. paprika
  • 1/2 tsp. Italian herb seasoning
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder

Cut chicken into bite-sized cubes. Place corn flakes in a plastic bag. Crush using a rolling pin. Add remaining ingredients to the bag and shake well. Gradually add chicken pieces to the bag. Shake to coat. Place coated chicken pieces in a lightly greased baking dish so they are not touching. Cover with wax paper. Cook in the microwave on HIGH for 6-9 minutes, or until tender, turning pieces over about every 2-3 minutes.
