Peach Soup with Wine
Prep: 10 min, Cook: 10 min, plus chilling time.
  • 2 lbs. peaches
  • 1 cup water
  • 1/4 cup sugar
  • 1 Tbs. grated lemon peel
  • 1/2 cup dry white wine
  • 2 fresh mint sprigs

Blanch peaches under hot water. Remove skins, cut in half, remove pits, and slice. In a saucepan, bring one cup water to boil and add sugar. Boil for a few minutes until sugar is dissolved. Add peaches and lightly poach. Let cool, then puree in a blender. Add lemon peel and wine. Chill for two hours. Serve with garnish of fresh mint springs.
