- 2 potatoes, blanched, dried, and thinly diced
- 2 tsp. corn or vegetable oil
- 1/2 cup green or red bell pepper, chopped
- 1/2 tsp. onions, chopped
- 1/8 tsp. salt
- 1/8 tsp. black pepper
In a heavy, nonreactive saucepan, combine all ingredients and sauté until potatoes are browned.
