Cajun

Cajun is a style of cooking that combines French and Southern-style dishes. Cajun is characterized by the use of dark roux and pork fat. It also uses green peppers, onions, and celery, along with filé powder as a main spice. Jambalaya is a popular Cajun dish. The name of the style comes from French settlers in Louisiana who were forced out of Nova Scotia in the 1700s. Cajun cooking is different from Creole cooking, which uses more cream and tomatoes and fewer spices.
