Dietary Exchange

A dietary exchange is the basis of a meal planning system developed by a committee from the American Diabetes Association and the American Dietetic Association. It was designed for diabetics and for people following special diets, based on principles of good nutrition that anyone can follow.

The Dietary Exchange system classifies foods into various exchange categories (such as starch exchanges, fruit exchanges, vegetable exchanges, very lean meat exchanges, etc.). Foods within each exchange category are defined so that one serving of each food contains approximately the same amount of carbohydrate, protein, fat, and energy.

Recommended diets using exchanges are typically based on specific number of exchanges from each category. A person can then select specific foods within each category that add up to the recommended number of exchanges. For example, if a nutrition plan calls for one starch exchange, a person could choose one-half cup of cooked pasta, OR one slice of bread, OR a small (3 oz.) baked potato. This system thereby allows a person to substitute one food for another food while maintaining approximately the same nutritional value.
