Emulsion/Emulsifier

An emulsion is a mixture of two liquids which by nature do not usually mix. Water and oil is an example. Some emulsions do mix for a short time, but separate (unstable emulsions) after a period of time. An emulsifier is an agent that works to bind two incompatible liquids together permanently (stable emulsions). Egg yolks, mustard, and sour cream are common emulsifiers. Mayonnaise is considered a stable emulsion.
