Lard

Lard is rendered pork fat. Lard sold in supermarkets is typically hydrogenated, with a consistency similar to vegetable shortening. Because it is very rich in fat, lard makes for tender, tastier pie crusts and flaky biscuits. The best quality lard, called leaf lard, comes from the kidney area of hogs. To lard means to insert thin strips of pork fat, usually bacon, into a leaner cut of meat, such as beef round roast. This helps keep the meat tender and juicy.
