Oils

Oils are similar to fats, but they are liquid at room temperature. Oils come primarily from plant sources and are used in cooking. Most oils can be stored up to two months unrefrigerated. More delicate oils, such as olive oil, can turn rancid more quickly. They should be refrigerated if they are not going to be used up within a month. Coconut oil and palm oil are high in saturated fat.
