Yeast Yeast is a leavening agent with yeast cells. These cells are microorganisms that feed on flour and water, fermenting the flour and causing it to rise. Active dry yeast consists of small dehydrated yeast granules that are dormant until exposed to water. Instant yeast is a type of active dry yeast that can be mixed in dry form, rather than dissolved, into dough, thus reducing rising time significantly. Compressed yeast is fresh yeast that is formed into a cake shape. It has a short shelf life. Yeast was first used to preserve milk in the Mediterranean and is used extensively to make wine and beer. |
