Low-Cost Barbecuing Barbecuing is perfect when you are following a food budget. Because of the slow roast of coals, less expensive cuts of beef or pork can be grilled or smoked -- resulting in tender, flavorful meats. Marinating prior to cooking helps tenderize even the leanest cuts, and when cooked over slow coals in a covered cooker, they are good for any barbecue. If you are having company and steaks are just not in the budget, try beef roasts, such as a pot roast, chuck or round tip roast. Serving kabobs is a way to stretch more expensive cuts of beef -- not only do grilled vegetables make an attractive skewer, they also fill in when less quantity of meat is served. A pork butt roast or even pork tenderloin is great grilled or smoked. Poultry, including turkey, is always an economical choice for a barbecue. Whole chickens, which are less expensive per pound than those already cut up, can be cooked directly on the grill or on a rotisserie. Even an inexpensive hotdog tastes better when cooked out on a grill. Watch for sales on poultry, beef and pork and buy enough to fill the entire grill. The additional meats can be frozen and served later for a quick meal. Look for in-season produce to complement the meats you have chosen and you can easily entertain family and friends within your budget. |
