Selecting cheese When selecting cheese, look first for the freshness date. Nearly all domestic cheese manufacturers will put a date on the package or container to indicate the expiration date. Look next at the wrapper and avoid it if it is wet and sticky or if the cheese has shrunk away from the rind. When buying Blue or Roquefort cheese, avoid any with a brown color near the blue or green veins. Semi-firm cheese, such as Monterey Jack or mozzarella, should be moist, not dry or cracked. |
