Filleting a Fish To fillet a fish, first place it on its side on a cutting board. Using a sharp knife, cut along the line of the spine, cutting deep enough to remove the fish from the backbone. Cut diagonally behind the head and gills and remove the fillet, then do the same on the other side. |
