Seitan

Seitan is a type of wheat gluten made from whole wheat flour and water. Through a rinsing process, starch and some bran is removed from the flour, leaving behind gluten. Seitan is created by boiling the gluten and simmering it in vegetable stock. Seitan is typically used in sandwiches or fried or baked. It is a high-protein, low-fat, cholesterol-free food.
