Tips For Buying Watermelon

How do you tell when a watermelon is ripe? The ultimate test of maturity is thumping. Many old-timers claim this technique is foolproof. In the early morning or late afternoon (never in the heat of the day), rap the melon. If it is ripe, it sounds dull, flat, or dead. If it is green, it will give off a higher, hollow, musical, metallic ring. A ripe melon says "punk" and a green one says "pink" or "pank."

Ripe watermelons should have a yellow underside where the fruit contacted the ground and the rind should have a healthy sheen. If a watermelon is very hard and white pale green on the underside, it probably is immature.

Once picked, watermelon sugar content does not increase. However, when stored at warmer temperatures, color will deepen.

The typical shelf life for melons is 14-21 days. (For short periods of time, room temperature is ok). If necessary, watermelons can be held up to three weeks at 50-60 degrees F. You can refrigerate leftovers in airtight containers for more than a week.
