Gums

Gums are substances that give thickness to foods or form gels in food products (such as puddings, frozen desserts, and whipped toppings).

Gums come from many sources: agar, alginates, and carrageenan are derived from seaweed; guar, locust bean, and psyllium come from plant sources; pectin comes from plant extracts; xanthan gum comes from a corn starch fermentation process; gum arabic comes from substances exuded by plants; others derive from cellulose.
