Olive Oil

Olive oil is a very popular cooking and salad oil. Olive oil is graded according to its extraction method and by its acid content.

Virgin olive oils are made from the first pressing of olives without further processing. Extra virgin has an acid content of 1%. Superfine has 1.5%. Fine has 3%. Virgin has 4%.

Pure olive oils are extracted by heat. These are 100% olive oil, but the heat can create an unpleasant aftertaste.

Pomace olive oil is a low-quality oil refined from final pressings under heat and pressure. It is considered inferior by most cooks.
