Testing Potatoes for Cooking Quality If you have a potato and are not sure if it's good for baking, try this test: place the potato in a pan filled with salted water (about 1 part salt per 10 parts water). If the potato sinks, it is good for baking. If it floats, it is lower in solids and therefore waxier in texture when cooked. These potatoes are good for salads, for boiling, and for scalloping. |
