Canned and Frozen Lima Beans
Several types of lima beans are canned and frozen. The Fordhook variety, a name often shown on labels, is a large, thick bean. Several varieties of lima beans have small, thin beans. These are usually called baby limas. Lima beans are white, yellow, or green, depending on the variety and their maturity when harvested. Each color has its own flavor. Green limas are usually the youngest beans. Speckled butter beans are another variety of lima bean, found mostly in frozen form. They are larger than most other lima beans and have a different flavor. These beans range in color from green, pink, and red to lavender and purple, with brown, purple, and other speckling. Top-quality lima beans are less starchy than the lower grade and baby limas are less starchy than the larger beans. |
