Canned Cabbage Sauerkraut is one form of processed cabbage. The shredded cabbage is fermented in a brine of its own juice and salt, and it may be flavored with peppers, pimentos, tomatoes, and various spices. It is available canned and in refrigerated packages, and, at times, a semi-fresh product is sold from barrels or similar containers. "Sweet and sour" red cabbage is also sold. |
