Canned Hominy Hominy is prepared from the mature kernels of sweet corn or regular field corn. The kernels are soaked and cooked slightly. Then the hard outer covering is removed before further processing. Hominy is available in plastic bags in refrigerator cases, but it is usually canned either in a brine or as jellied hominy. It is a starchy vegetable like potatoes or sweet corn and is served hot. Jellied hominy may be sliced and fried like potato cakes. |
